Bulgur Balls in Yogurt

  • 1 1/2 cups #1 fine bulgur (soaked)
  • Salt and pepper
  • 1 egg
  • 2 cups yogurt
  • 2 tbsp. flour
  • 1 beaten egg
  • 8 cups water or broth
  1. Soak bulgur in enough water to cover for 30 minutes. Mix together the bulgur, egg, and flour; shape into small balls. Boil the water; add salt and pepper; and gently drop the bulgur balls in. Cook until the balls float to the top. Blend in 1 cup of the broth with the yogurt; add 1 beaten egg and stir carefully in warm soup.
