Baked Bulgur Custard

  • 1/4 cup #2 medium or #3 coarse bulgur
  • 1/2 tsp. cinnamon
  • 1/2 cup boiling water
  • 3 1/2 cups hot milk
  • 1/8 tsp. salt
  • 3/4 tsp. vanilla
  • 6 large eggs (beaten)
  • 1 tbsp. grated orange or lemon rind (optional)
  • 1/2 -2/3 cups sugar
  • 1 cup raisins
  • 1/2 tsp. salt
  1. Add bulgur to boiling, salted water. Stir, cover, bring to a boil, turn down to a low heat and cook for 25 minutes. Remove from heat and let steam. Add sugar, salt and cinnamon to beaten eggs. Pour hot milk into egg mixture, slowly. Add cooked bulgur, vanilla, orange rind and raisins. Pour into a 7 1/2″ x 11 1/2″ pan (or one of similar size). Set in a pan of hot water. Bake in 350° preheated oven, for one hour.
