Hearty Lentil Soup with Bulgur

picked and washed

fresh mint

#3 coarse bulgur
Salt and pepper

onion
sliced lengthwise

lemon juice
Cooking spray
Instructions
Cook lentils and bulgur in 4 cups water for 30 minutes. Sauté onion in oil until golden; add to soup. Add mint and seasonings; simmer a little longer. Serve hot or cold.
