Soak bulgur in boiling water for 20 minutes or until al dente. Finely chop all herbs, cucumbers and tomatoes. Add remaining ingredients except for lettuce leaves and mix well; wrap in lettuce leaves and serve with Greek yogurt tzatziki.
If using low-fat Greek yogurt, add 1 tsp. of low-fat mayonnaise for a creamier texture and flavor. Optional: Add diced cucumber and/or finely chopped chives.
