Honey Bulgur Bread

Ingredients

  • 1 cup #2 medium or #3 coarse bulgur 1 tbsp. salt
  • 3 cups boiling water
  • 2 pkg. active dry yeast
  • 1/2 cup honey
  • 1/4 cup warm water 115¡ to 120¡ F
  • 2 tbsp. vegetable oil
  • 6 1/2 cups all-purpose flour

Instructions

  • Combine bulgur, boiling water, honey, oil and salt in large bowl and cool to lukewarm (at least 20 minutes). Dissolve yeast in warm water. Add to cooled bulgur mixture. Blend in flour in 3 additions, beating after each addition until dough leaves side of bowl. Turn onto lightly-floured surface. Knead until smooth, elastic, and does not stick when pinched with fingers. Place in a greased bowl, turning to grease all sides. Cover and let rise in a warm place until doubled (about 90 min.) Punch down and divide dough in half. Let rest for 10 min. Shape into loaves. Place in greased 9x5x3" loaf pans. Cover and let rise until doubled (about 1 hr.) Bake at 400° about 30 minutes or until top of bread sounds hollow when lightly tapped with fingers. Remove from pans and cool on wire racks. Package when cool. Honey flavor is delicious. Bread may be a little heavier in texture than other white breads.
